An adventurous traveller always on the hunt for interesting ingredients and local food experiences, Chef de Cuisine Nick Philip brings his off-the-beaten-track knowledge to Sundara's beach-front tables. After starting his career in Australia, he hit the road to indulge his passion for Asian flavours and made what was meant to be a short stop in Bali. But Nick fell under the spell of the island and its vibrant street food culture, and spent four years heading up popular restaurants in Seminyak. He then resumed his travels, feeding his imagination with short stints in Michelin-starred establishments in Europe before returning to Asia to take up senior roles at 5-star hotels in Singapore and Thailand.
Returning to Bali as head chef at Sundara, Nick is always looking for new ways to bring a classic dish to life. He enjoys street food as much as fine dining and can usually be found eating in various warung to sate his appetite for local dishes. At Sundara, he combines authentic Asian flavours, classic technique and modern presentation for an innovative Customized Dining experience.
